Wow it has been chilly outside this week! Talk about a cold snap... I have some friends living in Northern Minnesota and it was -52 degrees with the windchill...-52 degrees! That is entirely TOO COLD.
To warm us all up a little bit, I decided to make a hearty, flavorful, steaming pot of soup. It is packed with Italian chicken sausage, tomatoes, zucchini, spinach, beans, and flavorful herbs and spices. It can't be beat. What's more, the flavor only improves as the soup sits, and it freezes wonderfully, too! So go grab the items from your pantry and throw this soup together. It couldn't be easier and will warm you up from the inside out. Enjoy!
Italian Sausage Soup
Yields: 8 generous servings
- 1 tsp. olive oil
- 1 package Italian sausage or chicken sausage (I use Trader Joes Sweet Italian Chicken Sausage)
- 3 cloves garlic - minced
- 1 onion - diced
- 6 cups low sodium chicken stock (I like using Better than Bullion in the soup isle)
- 2 14.5 oz cans Italian-style stewed tomatoes
- 1 generous cup sliced carrots
- 14.5 ounce can great Northern beans - drained
- 2 small zucchini - cut into half moons
- 2-3 cups spinach - packed
- 1/4 teaspoon ground black pepper
- Parmesan for topping
- Slice sausage into 1/4 inch coins. (If using sausage that crumbles, crumble into heated oil in stockpot)
- In a stockpot add oil over medium high heat and brown sausage with garlic and onions.
- Stir in broth, tomatoes, and carrots, and season with pepper to taste. Reduce heat, cover, and simmer 15 minutes.
- Stir in beans and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
- Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.
- Top with parmesan and enjoy!
